Cherry Pie Filling Recipe

 

Canning Instructions

Equipment

·         Cherry Pitter

·         Water Bath Caner

·         Quart sized canning jars

·         Canning funnel

 

Ingredients

12 c.    Fresh or frozen cherries

4 c.      Water or cherry juice

2.5 c.   Sugar

1 c.      ClearJel

1/3 c.   Lemon juice (bottled)

 

 

Canning Instructions

1.      Fresh cherries: put 6 c. in 1 gal. boiling water, boil 1 min. Drain, process next batch. Keep water.

2.      Frozen cherries: thaw and drain cherries: thaw and drain cherries, keep juice.

3.      Start water bath canner, add warm water to jars and place in canner to keep warm.

4.      In large pot, combine 4 c. cherry juice, sugar, and ClearJel. Bring to boil stirring constantly, until thick and bubbling. 5 mins. Add lemon juice, stir for 1 min. Fold in cherries, stir until it boils. Remove from heat.

5.      Place warm jars on a towel, and use a canning funnel, ladle hot pie filling into jars to 1 inch head space. Remove air bubbles, wipe rim and put on lid and band. Tighten to fingertip tight and place into canner.

6.      Cover jars in water, about 1 inch, and bring to boil. Process jars for 30 mins. Remove and cool.
