Homestead Chicken Broccoli Rice Bake


Sometimes the best meals aren't planned, they're simply pulled together from what you already have on hand.


This Chicken Broccoli Rice Bake brings together chicken we raised and processed ourselves, homemade chicken broth, and broccoli preserved from last season's harvest for a simple, hearty meal straight from the homestead kitchen.






The Recipe


Ingredients

2 chicken quarters

3 cups chicken broth

1 1/2 cups rice

1 1/2 cups broccoli

salt and pepper to taste


Directions

  1. Preheat your oven to 375°

  2. Pour the broth into a 8x11 baking dish and then add the rice and broccoli.

  3. Stir until combined, place the chicken quarters on top

  4. Sprinkle with the salt and pepper (we also love Everglades)

  5. Bake in preheated oven for about 40 minutes or until the chicken and rice are done.


Side note: You may need to add about 1/2 - 1 cup of broth to the dish once it's baked to ensure the rice cooks to a soft texture.

What happens when you look around the homestead kitchen and start pulling togehter what you already have? In our case, it became this hearty Chicken Broccoli Rice Bake made with our own home-raised chicken, chicken broth I made from previous chickens we reaised, and then added freeze-dried broccoli from last season.


The results?


A delicious baked dinner that was so filling, and so delicious, ready in minutes and soemthing we pulled straight from our own pantry. It's simple ingredients, a little improvising, and dinner was on the table.


And after a long day of working outside, this really hit the spot.
